Panda’s obsession? Pairing things that don’t just “go together,” but belong together. The spark for this one hit him in his maha-gedara in Galle, when the smell of curry leaves frying in coconut oil filled his grandmother’s kitchen. That smoky, green perfume stayed stuck in his head long after the rice was gone.

So he bottled it up: Old Reserve Arrack with some backbone, lime for a sharp slap, kitul honey for softness, and his pet project-a curry leaf cordial he fusses over like a bonsai. The result? Ceylon once ran on coffee. Before tea plantations swallowed the hills and afternoon cups got diplomatic, this island brewed the kind of coffee that punched you in the chest and called you brother. Bold, earthy beans - grown under the same tropical sun that now warms your overpriced iced lattes. But in the 1860s, coffee rust swept through like a curse. Fields died, planters scrambled, and the dream collapsed into the mud. Tea rose from the ashes like the golden child, and coffee faded into myth  a spirit in the hills.
